- 1 1/2 tsp vanilla extract
- 1/2 tsp kosher salt
- 1 heaping tsp ground cinnamon
- 1/2 cup white sugar
- 1/3 cup brown sugar
- 1 lb pecan halves

Preheat the oven to 250°F (120°C).

Mix the sugars, cinnamon, and salt in a small bowl.

Whisk the egg white and vanilla extract in a large bowl. Stir in the pecans and toss to coat. Pour the sugar mixture over the pecans and spread on a parchment-lined baking sheet.
