Ingredients
- 1/2 cup (100g) sugar
- 3 tbsp (30ml) unsweetened cocoa powder (heaping)
- 1/4 cup (30g) cornstarch
- pinch of salt
- 2 3/4 cups (660ml) milk
- 2 tbsp (30g) butter
- 1 1/2 tsp (7.5ml) vanilla
Instructions

Mix the sugar, cornstarch, cocoa powder, and salt in a medium pot.

Gradually add the milk while stirring.

Cook the mixture over medium heat, stirring constantly until it thickens and starts to boil.

Allow it to simmer gently for about a minute, stirring continually until thickened.

Strain the mixture into a bowl.

Add the butter and vanilla and stir constantly until the butter is melted.

Place plastic wrap directly against the surface of the pudding.

Refrigerate for at least one to two hours until chilled.

Before serving, beat vigorously with a wooden spoon to aerate and lighten the pudding.
