Just realized this recipe wasn't posted! I had to immediately find the written version and type it up! This is a great potato dish. Not light on calories but is so worth it as an occasional side dish!

Ingredients

Servings:
6
  • 2 1/2 lbs Russet potatoes, peeled
  • 6 TBSP unsalted butter
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 3/4 tsp salt
  • 8 oz Cheddar cheese, shredded, plus more for topping
  • 6 slices bacon, chopped
  • Green onions, sliced, for garnish

Instructions

  1. 1

Boil the potatoes in a pot of lightly salted water until fork tender. Drain, mash, and set aside.

  2. 2

In the meantime, cook the bacon in a heavy-bottomed skillet until browned. Set aside on a paper towel-lined plate.

  3. 3

Heat the butter and milk until hot. Add to the potatoes. Then add the cheese and sour cream, and season with salt. Fold gently until combined. Place into a lightly greased 9x9 inch (23x23 cm) casserole dish.

  4. 4

Preheat the oven to 375°F (190°C). Sprinkle the potatoes with some additional shredded Cheddar cheese and cooked bacon. Bake in the preheated oven, covered, for 25 minutes. Then uncover and bake for 10 more minutes. Garnish with green onions and serve.

FAQ

Can I make this loaded potato casserole ahead of time?+
Yes! You can assemble the casserole up to 24 hours in advance, cover it with plastic wrap, and refrigerate—just add 10-15 minutes to the baking time when cooking from cold. You can also freeze it for up to 3 months; thaw overnight in the fridge before baking.
What can I substitute for sour cream in this recipe?+
Greek yogurt works great as a 1:1 substitute and adds extra creaminess, or use cream cheese thinned with a bit of milk for a richer version. Cottage cheese blended smooth also works in a pinch.
How do I keep the potatoes from getting gluey?+
Don't over-mash—fold the ingredients together gently by hand instead of using a mixer, which can overwork the potatoes and make them gummy. Stop mixing as soon as everything is just combined.
What should I serve with loaded potato casserole?+
This is perfect alongside grilled chicken, steak, or roasted vegetables since it's hearty and rich—it pairs especially well with a simple green salad to balance the meal.
