  • 2 1/2 lbs boneless skinless chicken thighs
  • 3 tbsp soy sauce
  • 1/3 cup honey
  • 1 tbsp oil
  • 1 tsp lime zest
  • 3 tbsp lime juice
  • 5 garlic cloves, pressed
  • 2-inch piece of ginger, grated
  • 1–2 tbsp Sriracha
  • 1 1/4 tsp Kosher salt
  • Cilantro, lime wedges, and chives, for serving

Instructions

    Chop each chicken thigh into 2–3 pieces (about 1.5–2 inches each). Place them into a bowl or a resealable bag.

    Mix the remaining ingredients together in a blender and process until smooth. Pour about 1/2 cup (120ml) into a container and refrigerate. This is reserved for serving. Pour the remainder of the marinade over the chicken and let it marinate for 4 hours or overnight.

    Soak wooden skewers in water for a couple of hours or overnight.

    Thread chicken onto skewers. Grill on a preheated grill, covered, over medium heat for around 12 minutes, turning occasionally and ensuring they don't burn. Serve with the reserved marinade and garnishes of your choice.

Yes! You can marinate the chicken for up to 24 hours in the fridge for deeper flavor, then cook it whenever you're ready. You can also cook it fully, cool it, and refrigerate for up to 3 days—just reheat gently before serving with the reserved sauce.

You can use any hot sauce with similar heat level (like Sambal Oelek or Tabasco), or try gochujang for a deeper umami flavor—just use the same amount. If you prefer less heat, reduce the sriracha to 1/2 tbsp and add extra honey for sweetness.
