  • DRESSING
  • 1/2 cup fresh basil
  • 3 tbsp honey
  • 3 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1/2 tsp ground pepper
  • salt, to taste
  • 1/4 cup olive oil
  • SALAD
  • 6 cups arugula
  • 1 bunch green onions, chopped
  • 1 bunch radishes, sliced
  • 1 cup sugar snap peas, chopped
  • 1/3 cup snow peas, chopped
  • 1/3 cup crumbled feta

Instructions

    Pulse all of the salad dressing in the blender until blended and emulsified. Use immediately or refrigerate until the salad is ready to serve.

    Combine all of the vegetables in a large bowl, pour the prepared dressing on top, and crumble feta cheese over the salad.
