If you're craving something easy, fresh, and bursting with flavour, these Chicken Lettuce Cups are the way to go! They've quickly become a favourite in our household, and it's easy to see why. Not only are they quick to whip up on a busy weeknight, but they also hit all the right notes—savoury, sweet, a bit spicy, and wonderfully crunchy.

Ingredients

Servings:
4
  • 2 TBSP oil
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 2 lbs ground chicken (or beef)
  • 1 (8-ounce) can water chestnuts, drained and finely chopped
  • 1 bunch of green onions, white and green parts divided, chopped
  • 1/2 cup hoisin sauce
  • 1/3 cup soy sauce
  • 1/4 cup peanut butter
  • 2 TBSP honey
  • 2 TBSP rice vinegar or lime juice
  • 2 tsp Sriracha
  • 1 TBSP sesame oil
  • 4 cloves garlic, minced
  • 2 1/2 inches of fresh ginger, shredded or minced (or 1 tsp ground ginger)
  • 1/3 cup peanut pieces for serving
  • 1 head butter lettuce, washed and leaves dried with a paper towel
  • 1 shredded carrot
  • Lime wedges for serving

Instructions

  1. 1

Mix all the sauce ingredients together in a small bowl.

  2. 2

Heat 1 tbsp (15ml) oil in a large heavy pan. Add onions and peppers and cook for about 5 minutes on medium heat until softened and starting to turn golden. After 2 minutes, add the white parts of the green onions and cook. Remove to a plate.

  3. 3

Heat the remaining 1 tbsp (15ml) oil. Add chicken and cook for a few minutes on medium-high heat until browned in spots. Make sure to break up the pieces. The chicken doesn't need to be cooked all the way through, just mostly cooked, broken up into pieces, and browned in spots.

  4. 4

Add the sauce and chestnuts and cook until thickened and all the chicken pieces are coated in it and the chicken is fully cooked through. Return the reserved veggies from step 2 to the pan and stir-fry and mix well. Serve on top of lettuce leaves garnished with peanuts, carrots, the green parts of the green onions, and shredded carrots. Serve with lime wedges. Enjoy!

## Tips for Success

- Customize the Spice: If you're serving a crowd with varying heat preferences, you can easily keep the Sriracha on the side. This allows everyone to adjust the spice level to their taste.

- Keep it Crisp: Butter lettuce is ideal because of its sturdy yet tender leaves. It holds up well to the savoury filling without wilting, making it the perfect vehicle for these wraps.

- Time-Saving Prep: Pre-chopping the veggies and mixing the sauce ahead of time can make this meal even faster to prepare, especially on a busy weeknight.

FAQ

Can I make chicken lettuce cups ahead of time?+
Yes! You can prep the chicken filling up to 2 days ahead and store it in an airtight container in the fridge—just reheat gently before serving. However, assemble the lettuce cups right before eating so the leaves stay crisp and don't get soggy from the warm filling.
What can I substitute for butter lettuce?+
Iceberg, romaine, or even large cabbage leaves work great as alternatives—they're all sturdy enough to hold the filling without tearing. Avoid delicate lettuces like arugula or spinach, as they'll wilt under the warm chicken mixture.
How do I keep the lettuce cups from getting soggy?+
Drain the water chestnuts thoroughly and don't oversaturate the filling with sauce; you can always serve extra sauce on the side for dipping. Also, assemble each cup just before eating rather than preparing them all at once.
What should I serve with chicken lettuce cups?+
These pair perfectly with steamed rice, cauliflower rice for low-carb, or crispy chow mein noodles for added texture. A simple side salad or steamed bok choy rounds out the meal nicely.
