Copycat Panera Mac and Cheese

On our recent trip everyone fell in love with Panera's Mac and Cheese! Unfortunately, we don't have Panera in our city. Yet fortunately, that created a recipe development opportunity. This is unbelievably creamy, decadent, and delicious—a total win of a recipe that tastes exactly like Panera! This is now our favourite Mac and Cheese recipe going forward!

This is unbelievably creamy, decadent, and delicious—a total win of a recipe that tastes exactly like Panera! This is now our favourite Mac and Cheese recipe going forward!

  • 1 lb medium shells pasta
  • 1/4 cup unsalted butter
  • 1/4 cup flour
  • 2 1/2 cups milk
  • 1 cup heavy cream
  • 8-11 oz sharp white cheddar, shredded
  • 8 American cheese slices (ideally white, but regular ones will do)
  • 1/2 tsp ground dry mustard
  • 1 tsp kosher salt
  • 1/2 tsp hot sauce
  • 1/2 tsp pepper

Instructions

    Bring a large pot of salted water to a boil. Add the pasta noodles and cook until al dente. Do not overcook. Drain the pasta once it is ready.

    Melt the butter in a medium pan over medium-high heat. Add the flour and cook for about a minute, stirring it into a paste. While whisking, slowly pour in the milk and cream, a little at a time. Stir the mixture into a thick paste and then into a homogenous liquid. Add the dry mustard, hot sauce, kosher salt, and ground pepper. Bring to a boil (this will take about 4 minutes), stirring constantly. Once it has boiled, cook for about another 4 minutes until the sauce has thickened enough to coat the back of a spoon.

    Reduce the heat to low and add the cheeses a little at a time while stirring. Remove from heat and stir in the cooked pasta. Serve and enjoy!

Can you make Copycat Panera Mac and Cheese ahead of time?+
Yes! You can assemble it completely, cover it, and refrigerate for up to 2 days before baking. Just add 5-10 extra minutes to your baking time since you're starting from cold. You can also freeze it for up to 3 months—thaw overnight in the fridge before reheating.
What can you substitute for American cheese slices?+
If you can't find white American cheese, regular yellow American cheese works fine and gives a slightly milder flavor. You can also use 4 oz of extra sharp cheddar or a combination of Gruyère and cheddar for a more gourmet twist, though it won't taste exactly like Panera's version.
Why is my mac and cheese grainy or broken?+
This usually happens from overheating the cheese sauce after adding cheese—high heat causes the proteins to separate. Keep your heat at medium and stir constantly once you add the cheese, removing the pan from heat as soon as everything is melted and combined.
How should you serve Copycat Panera Mac and Cheese?+
Serve it hot straight from the pan or baking dish, ideally with a simple side salad or steamed broccoli to balance the richness. A crusty bread on the side is perfect for soaking up any extra sauce, just like at Panera.
