  • 1 pint (470ml) grape tomatoes, halved
  • 1 yellow or orange bell pepper, chopped
  • 1/2 red onion, diced
  • 1/2 jalapeño, small dice
  • 2 avocados, diced or sliced
  • 1 15-oz (425g) can black beans, drained and rinsed
  • Zest of 2 limes
  • 1/3 cup (80ml) lime juice
  • 1/4 cup (60ml) olive oil
  • 1 tsp (5g) kosher salt
  • 1/2 tsp (2g) black pepper
  • 2 garlic cloves, pressed

Instructions

    Mix all the dressing ingredients together in a small bowl.

    Mix all the salad ingredients together in a large bowl. Please note, if avocados are not added, this salad stores well in the fridge for 2 days. As such, I don't mix the avocados in right away and add them to individual plates when the salad is being served. Pour the dressing over the ingredients, toss well, and serve.

Yes! Mix everything except the avocados together and refrigerate for up to 2 days—the avocados will brown if stored too long, so dice and add them right before serving or to individual plates.

Try cucumber, hearts of palm, or crispy chickpeas for a similar creamy or textural element without the avocado, and the salad will keep much longer in the fridge.
How do you keep avocado from turning brown in guacamole salad?+
Add the avocado to individual plates right before eating, or toss it in at the very last moment just before serving—keeping it separate from the acidic dressing until then helps prevent browning.
