This individual berry trifle is the perfect balance of textures and flavors. With layers of juicy, glistening berries, creamy whipped topping, and crunchy cookies, it's a dessert that's sure to please everyone—even those who usually shy away from whipped cream!

One secret ingredient that makes this dessert so irresistible? A touch of sour cream mixed into the whipped topping. You won't be able to taste it directly, but it gives the cream a brightness and subtle tang that pairs beautifully with the sweet berries and cookie layers. Macerating the berries in a bit of sugar helps them release their juices, creating a luscious sauce that soaks into each layer for even more flavor.

Another reason to love this trifle is how simple it is to put together! You can prep all the components ahead of time—whip up the cream, slice the berries, and crush the cookies—then just assemble before serving. It's a no-fuss dessert that's elegant enough for entertaining but easy enough for any summer day.

Ingredients

Servings:
4
  • ### For the Berries
  • 2 cups strawberries
  • 1 cup blackberries
  • 1 cup raspberries
  • 5 ½ tbsp sugar
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • ### For the Whipped Cream
  • 1 cup heavy cream
  • ¼ tsp vanilla
  • 1 tbsp plus 1 tsp granulated sugar
  • ¼ cup sour cream, at room temp
  • ### Everything Else
  • 1 cup crunchy chocolate cookies of choice, crushed: chocolate wafers, double chocolate chip cookies (my preference - double chocolate crispy chips ahoy)
  • ¼ cup brownie bits, optional
  • whole fruit, for garnish, optional
  • mint, for garnish, optional

Instructions

  1. 1

Wash and dry your berries. Quarter the strawberries. Cut the blackberries in half. Place them in a bowl and sprinkle with sugar, lemon zest, and juice. Toss the berries, cover, and allow them to sit at room temperature for at least half an hour. Then transfer to the fridge to chill until ready to serve (at least half an hour more and up to 6 hours).

  2. 2

Whip the heavy cream, sugar, and vanilla together. Start on medium speed, then gradually increase the speed. Whip the cream to medium soft peaks. Gently fold in the sour cream. Refrigerate covered until ready to serve.

  3. 3

When ready to serve, place some cookie crumbs on the bottom of 4 serving cups. Dollop some whipped cream on top. Toss the berries in their juices and spoon them over the cream. If using brownies, place some over the berries. Repeat the process for a trifle look. Garnish with garnishes of your choice. Serve immediately.

FAQ

Can you make individual berry trifles ahead of time?+
Yes! You can prep the berries up to 6 hours ahead and store them in the fridge, and whip the cream several hours before serving. However, assemble the trifles just before serving to keep the cookie layers crunchy instead of getting soggy from the fruit juices.
What can you substitute for heavy cream in this recipe?+
You can use Greek yogurt or mascarpone for a tangier flavor, or whipped coconut cream if you need a dairy-free option—just avoid using sour cream alone as it won't whip to the right texture.
How do you prevent the cookies from getting soggy in berry trifles?+
The key is assembling the trifles right before you serve them, and layering the crushed cookies between the whipped cream rather than directly touching the berry juices—this creates a barrier that keeps them crispy.
Can you use frozen berries instead of fresh for this trifle?+
It's not recommended because frozen berries release too much liquid when thawed and will make the trifle watery, but you can use fresh berries that are slightly past peak ripeness since they'll have more flavor and juice anyway.
