Roughly mashing the baked potato and stuffing it back into the shell with a bit of butter and salt makes the texture of this delicious potato memorable!

Ingredients

Servings:
4
  • 4 medium baked potatoes
  • 2 tbsp softened unsalted butter, and more as needed
  • fine salt (to taste)
  • Grated cheese, green onion, sour cream, sliced jalapenos, and any other toppings of choice

Instructions

  1. 1

Preheat the oven to 375°F (190°C). Line a half sheet with parchment paper.

  2. 2

Scrub potatoes under running water well. Pierce each potato with a knife at least 3–5 times; this will help with even baking.

  3. 3

Place potatoes directly on wire racks with prepared baking sheets under them to catch drippings. Alternatively, you can also bake them on top of the baking sheet. Bake in the preheated oven for 50–65 minutes. The time will vary depending on the size of your potato. Start checking after 45 minutes. You want the skin to be crisp and the inside to be very tender when pierced with a fork.

  4. 4

Remove the potatoes from the oven and let them cool slightly for about 5 minutes. Cut open the tops and discard the skins. Scoop out the potato into a medium bowl and mash roughly. We are not making mashed potatoes (although we can if desired)—we are simply creating a rustic look and feel to the potato. Season with salt and fold in butter. Fill each potato skin with this coarsely mashed potato.

  5. 5

You can top it with grated cheese if desired, or leave it as is. Consider placing a small dollop of additional butter on top of each potato. Return to the oven for 3–5 minutes just to warm through and to melt the cheese if using. Remove from the oven and serve with your favourite toppings.

FAQ

How long do baked potatoes take to cook at 375°F?+
Baked potatoes typically take 45-60 minutes at 375°F depending on their size, so medium potatoes should be done in about 50 minutes. You'll know they're ready when a fork pierces the flesh easily and they feel soft inside.
Can you make baked potatoes ahead of time?+
Yes! Bake them up to a day ahead, then reheat wrapped in foil at 350°F for about 15 minutes, or microwave individual potatoes for 1-2 minutes. You can also store them in the fridge and eat them cold, though they're best enjoyed warm.
What's the best way to get crispy potato skin?+
After scrubbing and piercing your potatoes, rub them lightly with butter or oil and sprinkle with coarse salt before baking. Baking directly on the oven rack (instead of on a pan) also helps the skin crisp up more.
Can you use an air fryer or microwave instead of the oven?+
An air fryer works great—bake at 400°F for 25-30 minutes for crispier skin than the microwave. The microwave is fastest (8-12 minutes for medium potatoes), but won't give you that crispy exterior, so it's best for a quick fix rather than the classic baked potato experience.
