Greek Salad Dressing

I've been working on a Greek salad dressing for quite some time. Adding honey to the dressing and making it very gently sweet is a game changer!!

Place all ingredients in a tightly sealed container and shake until completely combined, emulsified, and thick.

FAQ

How long does homemade Greek salad dressing last in the fridge?+
Store this dressing in an airtight container in the refrigerator for up to 2 weeks. The flavors actually improve after a day or two, so make it ahead and let it sit—just give it a good shake before using since the oils and vinegar may separate.
Can I use just olive oil instead of mixing olive and vegetable oil?+
Yes, you can use all olive oil, but using a mix keeps the dressing from being too heavy and gives it a better drizzle consistency. If you prefer pure olive oil, use the full 2/3 cup and expect a richer, more robust flavor.
Why is my Greek dressing not emulsifying?+
Make sure you're shaking it vigorously in a sealed jar for at least 1-2 minutes—the Dijon mustard helps it emulsify, but you need to really incorporate it. If it still won't combine, try whisking it in a bowl with the mustard first before adding the oils.
What's the best way to use this dressing besides Greek salad?+
This tangy, herbaceous dressing is fantastic as a marinade for grilled chicken or fish, drizzled over roasted vegetables, or used as a dipping sauce for crusty bread and feta cheese. It also works great on grain bowls with quinoa or couscous.
