Mga Sangkap

Mga Serving:
6
  • 1.1 kg boneless skinless chicken thighs
  • 45 ml soy sauce
  • 113 g honey
  • 15 ml oil
  • 5 ml lime zest
  • 45 ml lime juice
  • 5 garlic cloves, pressed
  • 2-inch piece of ginger, grated
  • 15 ml Sriracha
  • 6 ml Kosher salt
  • Cilantro, lime wedges, and chives, for serving

Mga Tagubilin

  1. 1

Chop each chicken thigh into 2–3 pieces (about 1.5–2 inches each). Place them into a bowl or a resealable bag.

  2. Marinade

    2

Mix the remaining ingredients together in a blender and process until smooth. Pour about 1/2 cup (120ml) into a container and refrigerate. This is reserved for serving. Pour the remainder of the marinade over the chicken and let it marinate for 4 hours or overnight.

  3. 3

Soak wooden skewers in water for a couple of hours or overnight.

  4. Grilling

    4

Thread chicken onto skewers. Grill on a preheated grill, covered, over medium heat for around 12 minutes, turning occasionally and ensuring they don't burn. Serve with the reserved marinade and garnishes of your choice.

FAQ

Can I make this chicken ahead of time?+
Yes! You can marinate the chicken for up to 24 hours in the fridge for deeper flavor, then cook it whenever you're ready. You can also cook it fully, cool it, and refrigerate for up to 3 days—just reheat gently before serving with the reserved sauce.
What can I substitute for sriracha in this recipe?+
You can use any hot sauce with similar heat level (like Sambal Oelek or Tabasco), or try gochujang for a deeper umami flavor—just use the same amount. If you prefer less heat, reduce the sriracha to 1/2 tbsp and add extra honey for sweetness.
Why is my chicken tough or dry?+
Chicken thighs are forgiving, but you'll get the most tender results by not cooking past 165°F internal temperature and letting the meat rest a few minutes before serving. Don't skip the reserved sauce—drizzling it on top keeps everything moist and flavorful.
What should I serve with sriracha honey lime chicken?+
This pairs beautifully with coconut rice or jasmine rice to balance the spicy-sweet sauce, and a crisp side like cucumber salad or stir-fried bok choy. Fresh cilantro, lime wedges, and chives brighten it up as a garnish.
