Ingredients

  • 8 oz (227g) dried noodles (udon, ramen, soba, or even spaghetti)
  • 1 TBSP (15 ml) oil
  • 1 lb (454g) ground beef
  • 1 onion, chopped
  • 1/2 tsp kosher salt and freshly ground black pepper
  • 1 head of broccoli, cut into florets
  • 1 1/4 cups (300 ml) chicken stock
  • 1/3 cup (45g) peanuts, for garnish
  • 4 green onions, thinly sliced, for garnish
  • 1 TBSP (15 ml) corn starch
  • 5 garlic cloves, pressed
  • 1 inch (2.5 cm) fresh ginger, grated
  • 1/4 cup (60 ml) soy sauce
  • 1.5 TBSP (22 ml) honey
  • 3 TBSP (45 ml) oyster sauce
  • 1/2 tsp Sambal Oelek, or more to taste

Instructions

    Heat the oil in a large pan. Add the onion and ground beef, and cook on medium heat for about 6 minutes, until the beef is cooked through and the onion is tender. Season with salt and pepper.

    In the meantime, cook the noodles about 1.5 minutes less than the package instructions to al dente.

    Add the broccoli florets and chicken stock, cover the pan, and cook for 2–3 minutes, until the broccoli is a bit tender and bright green.

    Whisk all the sauce ingredients together.

    Pour the sauce over the beef and stir in the noodles. Cook, stirring, for about 2 minutes until the sauce is thickened and the noodles are cooked through. Garnish with peanuts and green onions.

FAQ

Can you make beef and broccoli stir fry ahead of time?+
Yes! You can prep all your ingredients the night before, but it's best to cook the dish fresh since the noodles will get soggy if stored with sauce. You can reheat leftovers in a pan with a splash of water for 2-3 minutes, though the texture won't be quite as crispy.
What can you substitute for ground beef in this recipe?+
Ground chicken, turkey, or pork work great as 1:1 swaps for the same cooking time. You can also use thinly sliced beef or chicken breast cut into bite-sized pieces—just adjust the cooking time to 4-5 minutes until cooked through.
Why is my stir fry sauce too thin?+
Make sure you're mixing the cornstarch with a little cold water before adding it to the pan—this helps it thicken properly. If your sauce is still watery after simmering for a minute, you likely need more cornstarch or to let it simmer uncovered a bit longer to reduce.

Udon and ramen noodles are ideal because they hold up well to the sauce and have a chewy texture, but soba or even regular spaghetti work fine too. Just cook them 1.5 minutes under the package time so they stay slightly firm and don't turn mushy in the stir fry.
