  • Muffin Base
  • 1/2 cup (100g) white sugar
  • 1/4 cup (55g) brown sugar
  • 1/3 cup (80ml) vegetable oil
  • 1/3 cup (80ml) milk
  • 1 large egg
  • 1 1/2 cups (185g) all-purpose flour
  • 2 tsp (10g) baking powder
  • 1/2 tsp (3g) salt
  • 1 cup fresh or frozen blueberries
  • Crumb Topping
  • 1/2 cup (100g) sugar
  • 1/3 cup (40g) all-purpose flour
  • 1/4 cup (57g) cold unsalted butter, cubed
  • 1 1/2 tsp (4g) cinnamon

Instructions

    Preheat the oven to 400°F (200°C).

    Whisk together the sugars, oil, milk, and eggs. Combine the salt, baking powder, and flour in a small bowl. Sift this into the egg mixture and gently fold with a spatula. Fold in the blueberries. Line the muffin pan with 8 liners and divide the batter equally between the muffin liners.

    Mix all the crumb topping ingredients and sprinkle over the muffins. Bake in the preheated oven for about 20–22 minutes, or until a toothpick inserted in the centre comes out clean.
