  • 8 slices of good multigrain bread, toasted
  • 2 medium avocados
  • 1 tbsp (15 ml) lemon or lime juice
  • 2 large tomatoes, sliced
  • 1/2 tsp (2.5 g) kosher salt
  • Freshly ground black pepper to taste
  • 1/2 cup (120 ml) hummus
  • 8 slices good cheese, such as Provolone, Havarti, or Swiss
  • 1 cup (30 g) alfalfa sprouts
  • 2/3 cup (80 g) shredded carrots
  • 1/2 English cucumber, sliced thinly

Instructions

    Mash the avocado with a fork. Add the lemon juice, kosher salt, and pepper.

    Spread the hummus over 4 toasted bread slices. Top each toast with 2 slices of cheese. Top with sprouts, tomatoes, cucumbers, and carrots.

    Spread the avocado mash over the remaining 4 bread slices. Close your sandwich by placing these toasts on top of the toasts prepared in step 2. Cut each sandwich in half with a serrated knife. Serve right away and enjoy!
