- 8 slices of good multigrain bread, toasted
- 2 medium avocados
- 15 ml lemon or lime juice
- 2 large tomatoes, sliced
- 3 g kosher salt
- Freshly ground black pepper to taste
- 120 ml hummus
- 8 slices good cheese, such as Provolone, Havarti, or Swiss
- 30 g alfalfa sprouts
- 80 g shredded carrots
- ½ English cucumber, sliced thinly

Avocado Spread
1Mash the avocado with a fork. Add the lemon juice, kosher salt, and pepper.
Assembly
2Spread the hummus over 4 toasted bread slices. Top each toast with 2 slices of cheese. Top with sprouts, tomatoes, cucumbers, and carrots.

Spread the avocado mash over the remaining 4 bread slices. Close your sandwich by placing these toasts on top of the toasts prepared in step 2. Cut each sandwich in half with a serrated knife. Serve right away and enjoy!
