Quick Beef and Broccoli Stir Fry with Noodles
As my prior post mentioned, I'm obsessed with quick 15 minute weeknight dinners. And this delicious meal happens to do just that!

- 227 g dried noodles (udon, ramen, soba, or even spaghetti)
- 15 ml oil
- 454 g ground beef
- 1 onion, chopped
- 3 ml kosher salt and freshly ground black pepper
- 1 head of broccoli, cut into florets
- 300 ml chicken stock
- 45 g peanuts, for garnish
- 4 green onions, thinly sliced, for garnish
- 15 ml corn starch
- 5 garlic cloves, pressed
- 1 inch (2.5 cm) fresh ginger, grated
- 60 ml soy sauce
- 22 ml honey
- 45 ml oyster sauce
- 3 ml Sambal Oelek, or more to taste

Heat the oil in a large pan. Add the onion and ground beef, and cook on medium heat for about 6 minutes, until the beef is cooked through and the onion is tender. Season with salt and pepper.

In the meantime, cook the noodles about 1.5 minutes less than the package instructions to al dente.

Add the broccoli florets and chicken stock, cover the pan, and cook for 2–3 minutes, until the broccoli is a bit tender and bright green.
Sauce
4Whisk all the sauce ingredients together.

Pour the sauce over the beef and stir in the noodles. Cook, stirring, for about 2 minutes until the sauce is thickened and the noodles are cooked through. Garnish with peanuts and green onions.
