My husband's favourite salad. It combines the freshest greens with apples, smoked Gouda, and candied pecans in a flavourful Maple Dijon vinaigrette. This is inspired by Pineridge Hollow Salad—a salad from a local restaurant.
Ingredients
- 2 TBSP maple syrup
- 1 TBSP Dijon mustard
- 2 TBSP red wine vinegar
- 1 shallot, minced
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 cup (60 ml) olive oil
- 2 TBSP (30 ml) neutral oil such as sunflower
- 10 cups (2.4 L) greens (green leaf lettuce, mesclun greens, etc.)
- 2–3 apples such as Gala or Fuji, chopped
- 1 cup (113 g) shredded smoked Gouda cheese
- 1 cup (100 g) candied pecans (homemade or store-bought)
Instructions

For the salad dressing, combine all ingredients in a tightly sealed jar and shake until emulsified.

Dress the greens with the dressing. Top with apples, candied pecans, and cheese. Season with freshly ground black pepper and serve.
