  • 2 TBSP maple syrup
  • 1 TBSP Dijon mustard
  • 2 TBSP red wine vinegar
  • 1 shallot, minced
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 cup (60 ml) olive oil
  • 2 TBSP (30 ml) neutral oil such as sunflower
  • 10 cups (2.4 L) greens (green leaf lettuce, mesclun greens, etc.)
  • 2–3 apples such as Gala or Fuji, chopped
  • 1 cup (113 g) shredded smoked Gouda cheese
  • 1 cup (100 g) candied pecans (homemade or store-bought)

Instructions

    For the salad dressing, combine all ingredients in a tightly sealed jar and shake until emulsified.

    Dress the greens with the dressing. Top with apples, candied pecans, and cheese. Season with freshly ground black pepper and serve.
