  • 2 English cucumbers, halved lengthwise, seeded and sliced into 1/4-inch slices
  • 1/2 red onion, thinly sliced
  • 1/2 cup cilantro, chopped
  • 1/3 cup salted roasted peanuts
  • 1 Thai chili or jalapeno, sliced
  • 1/4 cup fresh lime juice
  • 1 1/2 TBSP sugar
  • 1 1/2 TBSP fish sauce
  • 1 tsp honey
  • 2 TBSP vegetable oil
  • 1 garlic clove, pressed
  • 1/2 tsp Sambal Oelek, or more to taste

Instructions

    Prep and combine vegetables

    Place the cucumbers, onions, cilantro, peanuts, and jalapeño/chiles in a bowl.

    Whisk the dressing

    In a small bowl, whisk together the lime juice, sugar, fish sauce, honey, vegetable oil, garlic, and Sambal Oelek until well combined.

    Toss and serve

    Pour the dressing over the cucumbers and toss everything together. Serve right away and enjoy!
