  • 1 red bell pepper, sliced thinly
  • 1 cup shelled edamame, cooked and cooled
  • 2 green onions, thinly sliced, plus more for garnish
  • 1/2 cup salted peanuts, chopped (just before serving)
  • 1/4 cup honey
  • 1/4 cup oil
  • 1/4 cup lime juice (or rice vinegar)
  • 1 tbsp peanut butter
  • 1 tbsp soy sauce
  • 2 tsp Sriracha
  • 1 tsp sesame oil
  • 1/2 tsp salt
  • 1 1/2 inch piece of ginger, grated
  • 1 large garlic clove, pressed

Instructions

    Combine the coleslaw mix, shredded carrots, red bell pepper, edamame, and green onions in a large bowl. Set aside.
