Make the chocolate ganache: Heat the heavy whipping cream (120ml) until steaming (not boiling). Pour over the finely chopped dark chocolate. Let sit for about 2 minutes, then stir in the butter and stir gently until glossy and smooth.
Step 6
Top the peanut butter balls: Dollop the warm ganache over the chilled peanut butter balls (after the 3-hour refrigeration in Step 4). Allow the ganache to set at room temperature for 30–40 minutes, or refrigerate until firm. Store in the fridge. They also freeze well for up to 2 weeks.
